Huaiyang cuisine is one of the Four Great Traditions of Chinese cuisine derived from the native cooking styles centred around the cities of Yangzhou, Huaian and Zhenjiang in China’s Jiangsu and Zhejiang provinces. Slightly sweet and almost never spicy, Huaiyang cuisine showcases the quality of the ingredients, meticulously and elaborately prepared to reflect the region’s culinary traditions. Head Chef Xinlin Yuan certifies the authenticity and quality of all dishes, creating subtle nuances and perfect seasonings that allow natural flavours shine through.
